When my family is eating Mexican food, I missed having the rice. Well not anymore 🙂 This cauliflower rice is even better than the Mexican rice they eat. And waaaay healthier too.
No crappy carbage. Just wonderful keto cauliflower rice.
First you need to cook bacon in the pan. Once crisp, remove and leave grease.
Saute onion and garlic in bacon grease
Add cauliflower, bacon and seasonings to the onion mixture and combine well.
Garnish with Cilantro and be prepared to be amazed.
Low Carb Cauliflower Rice
4 cups cauliflower florets
4 slices bacon
2 cloves of garlic, minced
1/2 cup onion, chopped
1 tsp ground cumin
½ tsp red chili flakes
1 tsp dried oregano
½ tsp garlic powder
1/2 cup chicken broth
¼ cup fresh cilantro, chopped
salt and black pepper to taste
Cook bacon in pan. Remove when crisp and chop. Saute onion and garlic in bacon grease. Add cauliflower and saute for another 5 minutes. Add seasonings and broth. Cook for 20 minutes. Add chopped bacon and mix well. Serve with cilantro garnish.
