Jon is an Air Force Officer, happily married with 2 adorable children. He is also the founder of the innovative and delicious Tokelau Coffee.

When he lost his dad to diabetes in 2015, it was a wakeup call. At 32, he was overweight and headed right in his father’s footsteps. The turning point was when he learned how to burn fat for fuel, using the ketogenic diet.

He swapped sugar for healthy fats, like MCT’s, and lost over 40 lbs in just a few months.

BEFORE KETO

  • I started my Keto journey about 2 years ago.
  • I’ve been a in the Air force for 2 years now, so I’ve always had to be in shape.
  • My family has history of diabetes. My dad and grandfather both had diabetes.
  • So, I really started looking at how I wanted to be healthier and more sensitive towards insulin.
  • I thought I could fully fix the problem just by working out more.
  • I actually trained for and ran a marathon, I tried a bunch of things, but after 6 months of trying different workouts, I discovered that you can’t out run a bad diet.
  • So, I started looking at different options and I found Keto. Once I started, within a couple of months, I had lost over 40 pounds
  • I have always been physically in good shape because I would have to take fitness tests for the Air Force at least once a year.
  • But, what Keto did initially for my body was just so amazing that I wanted to really learn more about it and dive deep into it.
  • Now, I am really excited to be a part of the Keto community.
  • I’ve been able to keep my initial weight I lost off for 2 years now.
  • Keto is very different from the other programs that are out there, it’s not a big struggle, it’s not difficult to stick to.
  • It really works really well with your body.
  • And then also, I think it does a lot of things to help us mentally as well, not just physically.

 

HOW DID YOU FIND KETO?

  • I kind of worked my way into it.
  • I started out with cutting a lot of my carbohydrates.
  • And I was noticing as I was cutting my carbs that I was seeing better and better results.
  • And then finally, I actually ran across a podcast talking about the benefits of the Ketogenic diets.
  • I did some research about it, because I am an avid researcher. I took down kind of a pros and cons of it.
  • For me, what was interesting about it was the insulin perspective, knowing that I have that family history with diabetes.
  • I did not want to be at a place where I am taking insulin at 40 years old.
  • Just learning about it was so important.
  • I’ll be honest. The first week or two I was like, “Man, what am I doing?”
  • But when I was over that, around a week or two, I was hooked.
  • I’ve been on it for the last 2 years pretty consistently.

 

THE BIGGEST STRUGGLE

  • One struggle I encountered was that lethargy you get from Keto when you first start out.
  • I am a sugar addict to a certain extent and I think that was probably the hardest part to realize. And the most important to let go of.
  • One of the things that helped me overcome a lot of the struggles was that I taught myself to cook more. Including Keto treats and also getting into MCT oil.
  • Normally I do 2 cups of coffee in the morning.
  • I know there’s a lot of different types of fasts out there and I have experimented with fasting. I think for some people they work very well – it helps keep the calories low through out the day.

 

FAVORITE RECIPES

  • Keto Ice cream or Keto Mousse.
    • It’s a simple combination of coconut cream, chocolate and a little bit of sweetener, salt and cinnamon. Mix it all in the blender and put it in the fridge until set.
    • It tastes really good, it is a good fat bomb and it works really well.
    • I use organic powdered chocolate.
  • I experimented with a number of different things to make sure I didn’t have any sensitivities or allergies to ingredients.
  • I tested dairy first because I know a lot of people have sensitivity towards dairy.
  • I found out that I actually don’t have that big sensitivity towards dairy, but what makes it a little bit tough with me doing Keto is that I have a little bit of sensitivity towards nuts.
  • What seems to work really well for me is keeping my protein on the lower side because I don’t want that insulin respond from it.
  • I keep my protein about 20% range and I really haven’t noticed any sort of decrease in my ability in my workouts.
  • In fact, my last physical fitness test with the Air Force, I had the best run time that I had in about 5 years.
  • I’ve had a few friends that I’ve inspired to go Keto.
  • And now that it has been 2 years, my family has started to ask some questions about Keto and the science behind it.
  • I am more of the cook in the house, so I do a lot of cooking when I am not deployed in the military.
  • My wife is not Keto and what’s interesting to realize is her metabolism works differently than mine does.
  • So, sometimes that’s a little bit of struggle for the both of us because she has really sensitive taste palette that sometimes can be an issue with some of the foods within the Keto diet.
  • That is something that we have had to adjust for the last couple of years – finding things for the both of us.

 

THE COFFEE

  • I have always been interested in being an entrepreneur.
  • Looking at what I learned from Keto and all the benefits that I have experienced, as well as looking at how I can help the community, it’s just a natural fit to say, “How can I make this convenient for other people?”
  • I think once they commit and they experience Keto for a few couple of weeks, and they see the results of it, then it makes it a lot easier for them to continue on the process.
  • I am an avid reader and I listen to a lot of audio books. One of the things that really struck me was when I was listening to Garry Taubes’ book and one of the studies that he mentioned in their was the Tokelau Island where they’re living out with fish and healthy coconuts.
  • Basically the name is the tribute of the Tokelau Island.

 

ADVICE

  • Jump in for both feet forward.
  • Do the things that you can.
  • Use the tools that you have.
  • Simply tracking on what you eat into MyFitnessPal is a huge step.
  • For me, I track both net and total carbs.
