As a mom to 4 kids, all 10 years and younger, and married to a chiropractor, she thought she was doing everything right (eating gluten free, dairy free, corn free, eating according to blood types)…but she was at her heaviest weight and climbing.

  • Last year I was at my heaviest weight
  • I was even heavier than when I was pregnant with my twins.
  • I didn’t really know what else I could do about my weight and health.
  • We have always been very holistic. We don’t like supplements or other unnatural products
  • I found the Ketogenic diet when a friend posted about her weight-loss with Keto on a Facebook group, I didn’t even know her in person
  • I was amazed by the people who posted their before and after photos or the people who were saying that they were able to quit their prescription medications.
  • I started really researching this way of eating because I was hesitant, I wanted to know everything I could about it
  • It had to be something I 100% understood.
  • It was February 9 when I finally started on the Keto diet.
  • A few weeks in my husband was starting to get jealous of my food, saying that mine “looked so much better” than what I had made the rest of the family.
  • And eventually he said that he needed to lose a few pounds and would give Keto a try as well.
  • And slowly but surely, that was the beginning of our Ketogenic journey
  • That one person that spoke about Keto, on that one Facebook group, changed my life
  • Because of that, when someone ask me about Keto, or when I have an opportunity to tell people about this way of eating, I am very happy to do so.
  • I kind of started doing low-carb my kids over the summer and then went straight to Keto
  • Now, the whole family is on Keto – even the dogs!
  • The foods that I have found that I really enjoyed cooking with has been zucchini and cabbage.
  • I just cube up a zucchini and sauté it and then add Ralph’s Marinara, add some ground beef or ground sausage, and add  mushrooms and bell pepper to make it spaghetti-ish.
  • I mainly use avocado oil, olive oil or coconut oil for sautéing.
  • I was never a big cook before Keto.
  • I feel like when I started Keto, I started exploring and finding new foods that I haven’t tried before.
  • My before picture was taken at the very end of May of last year, that wasn’t even when I was at my heaviest.
  • My heaviest was around Christmas, I had found out about Keto but hadn’t tried it yet.
  • After I jumped into Keto on February 9th, my weight plateaued on August 1st. My after picture was taken on August 9th.
  • And I am not trying to lose anymore weight. I continuing this way of eating for my health overall now.
  • I feel so much better. My energy level is back where it should have been all along. I can keep up with my kids – all four of them.
  • I can take a photos with my kids and not just always behind them, I don’t feel self-conscious about how I look anymore.
  • I can’t express how much better I feel, I am sleeping better, I don’t snore and actually started having dreams again.
  • I thought that not dreaming at night was just part of being an adult before.

 

DAY IN YOUR LIFE OF YOUR FOOD PLAN

  • My Keto Calculator  macros are pretty spot on.
  • 75% fat, 20% protein and 5% or less carbs
  • I shoot for high fat and low carbs.
  • The first week or two, I tried so hard to get to 20 grams of carbs and sometimes I was a little bit over.
  • And as I went on, I got more and more familiar with Keto foods and I felt ready to try a little harder.
  • I like bulletproof coffee, so I will have a bulletproof coffee in the morning. I don’t eat much breakfast unless it’s bacon.
  • I will usually just pick at small snacks for lunch, lunch meat and stuff.
  • My biggest meal is dinner, because I have to make dinner for my whole family as well.
  • This way of eating is so easy.
  • I realized I had been depriving myself of everything before starting Keto.
  • Now, I can have bacon and cheese!
  • All of a sudden, I am starting to enjoy things and love my food again.
  • I love having a way of eating that you know is healthy, that is healing your body in so many different ways, is enjoyable and easy.
  • This is a lifetime way of eating for me and my family.

TOUGH SPOTS

  • I may have a week or 2 of not losing much weight.
  • My biggest challenge is listening to my body and realizing what the cause of my actions are.
  • Right now, being on maintenance mode, I am really more focused on health than losing weight.
  • I just quit nuts for the past week or two because I felt that I am becoming dependent on it as a snack.
  • I am trying to become more aware of my habits.

 

ADVICE

  • Use your brain.
  • Don’t listen to media.
  • Don’t listen to what the food and drug companies are pushing.
  • As far as Keto goes, read about it.
  • Just learn. The more you learn the more you’re empowered to make healthy choices.
  • For me, Ketogenic diet is the answer to taking control of my health.

 

WHAT’S NEXT FOR YOU?

  • First, I am sticking with this way of eating.
  • I want my kids to eat this way 100%.
  • My focus right now is turning my whole family Keto.
  • My husband and I have been talking about doing Keto in his clinic just to give people guidance a little extra of encouragement.
  • I never track calories anymore.
  • I quit tracking my food because I found it really stressful.
  • Nobody wants to live their lives tracking every meal.
  • My husband did lose weight from when he started Keto.
  • When he started he was 198 pounds and now he’s like 175 pounds.
  • Me and my husband are planning to start weight lifting.
  • You always have an opportunity with each day to pick yourself up and start over.
  • Start over as many times as you need to, until you really understand this way of eating.
  • You are the only person that can control you.
  • Just continue to push forward and eventually you’ll be fat-adapted.

 

 FAVORITE RECIPE

I can’t say that I really have any favorite recipes because I never cook the same meal the same way twice. I tend to just use what I have in the house to improvise. Over the summer though, my stepdad gave me a lot of huge zucchini from his garden. I really loved using sliced zucchini as a replacement for lasagna noodles or tortillas in enchiladas. I also cubed and sauteed the zucchini, and combined it with low carb marinara sauce and ground sausage or link sausage. I added things like chopped up pepperoni, sauteed mushrooms, bell peppers, and pepperoncinis. Before keto, I wasn’t much of a cook. I relied on cans and packages, but never really had an attraction to cooking or discovering new recipes. But since I started the keto way of eating, I am intrigued by recipes and seeking out new low-carb foods and combinations. One thing that I have discovered is that I love cabbage! I had never even bought a cabbage before this way of eating, and i assumed that I wouldn’t like it. Since going keto, I have used chopped sauteed cabbage as a replacement for noodles in beef stroganoff. I’ve also put it with that same marinara and ground sausage mixture that I mentioned when I didn’t have a zucchini on hand. The next things I want to try with cabbage are “egg roll in a bowl” and chicken or shrimp alfredo. And the best part about it is that one head of cabbage is only like $0.40 but I can use it in the base of a recipe to feed my family of 6 for at least two meals!
