Chicken Tikka Masala

Chicken Tikka Masala is a spicy dish that is so healthy and delicious! Traditionally it is served with the Indian bread, naan, but tastes great without it! So much healthier too!

6 Chicken Breasts, pounded thin

  • 1 t cumin
  • 1 t coriander
  • 1/2 t cayenne
  • 1 t sea salt

Combine and spread over chicken, let sit.

  • 1 1/2 cups greek yogurt
  • 2 T minced ginger
  • 3 garlic cloves, minced
  • 3 T. coconut oil

Combine and set aside.

  • 3T coconut oil
  • 1 serrano chili, minced
  • 1 onion, chopped
  • 2T ginger minced
  • 4 cloves garlic, minced
  • 2T chiles in adobo
  • 1 1/2 T garam masala

Heat oil and saute all ingredients for 3-4 minutes. Add:

  • 2 cans crushed tomatoes,
  • 1T Coconut sugar
  • 1/2 t salt

Cook down for 15 minutes. add 1 cup greek yogurt and keep warm.   Coat chicken with yogurt mixture and broil on top rack for 20 minutes, turning over halfway through. Let cool for 5 minutes, then chop and add to pan. Coat well. Add 1 cup chopped cilantro and serve. For High Carb day, add 1/2 cup brown basmati rice. For low carb day, serve with veggies.
