Keto – Salad and Wine – Big Mac Salad

 

Welcome to another episode of Salad and Wine.
We are back!

I wrote a little cookbook and so, I figured out that the best way for me to test all these recipes is by having a show for you and for me because it’s kind of fun. 😁

 

So, first things first. We have to talk about wine.
So, this is a bottle from France that I bought from Trader Joe’s but it was made in France. it is Cotes du Rhone, so that is what we are drinking today.

 

Today, I’ve been wanting to try this salad called, “Big Mac Salad.”

I haven’t probably had a Big Mac in 15 years or so, but it’s really popular and I remember the great taste and I used to love them.
So, I’m going to make a Big Mac salad also KETOFIED it.
Everything about me is low-carb, high fat, moderate protein for life at least, I think but I love the way I feel now. ☺️


We are going to start with lettuce. I never buy iceberg lettuce because there’s really no nutrition in it, it’s just a bunch of water but today for the salad, it calls for iceberg and so I thought I would just do the iceberg and next time when I make it again, I might do half romaine and half iceberg – at least romaine has something in it but I wanted to follow the recipe exactly as it is.


So what you want to do is make sure you wash your lettuce.
I have this really cool organic wash to wash the fruits and vegetables.
We’re going to shred the lettuce with a knife and I could use the food processor but then it just turns into lettuce soup so, it doesn’t work very well. Just thinly slice your lettuce and be sure to cut just one direction or it’s going to be.

 

Next, I cook grass-fed ground beef and I do three pounds at a time because my son eats a ton of it and I eat a lot of it too on salads and so, we’re going to add four ounces of ground beef to the lettuce.

 

Next, we’re going to add the onion. Now, my recipe would call for one tablespoon per salad of chopped onion or if you’re going to make four salads like if they’re for the whole family then, it will actually be a quarter cup.

it’s so funny when my husband chops an onion because he literally takes the whole onion and then works to chop it. 🤣
You always want to chop it in half so you have a flat surface to cut with. And I thinly slice it and then I chop what’s left and sprinkle the onion on top it.

Onions and garlics are super healthy. They’re not healthy for your love life where you’re going to go kissing somebody after, but they’re healthy for your body.

Next, let’s add pickle. My favorite brand of dill pickles is bubbies. You could find it at the grocery store over like on the side wall where the deli meat is. Bubbies is naturally fermented dill pickle so, it’s just pickles and salt and no water.
So the ones that add vinegar there are not naturally fermented like this because they use the vinegar to actually pickle the cucumber instead of just the salt and the fermentation process.

 

We’re going to add some pickle that’s a half a pickle per serving, slice it up half of one of these and just place it and make it look pretty.


We are going to put cheese. I use Kerrygold cheddar cheese. You can go buy at Costco and you can buy it at Trader Joe’s but it’s much less expensive at Costco, like $5.99 a pound but it is grass-fed from Ireland and is also really good.

You sprinkle on two tablespoons of cheese.

 

 

And last but not least, we are going to make this special sauce with Chipotle Lime Mayo. What we’re going to do is, take two tablespoons of Chipotle Lime Mayo and this is by primal kitchen. It’s absolutely fabulous.
And you’re going to add a little bit of Stevia because the special sauce has a little sweetness in it and so is the bun.

They put sugar in their buns because they want you to crave them more. So. I put just a teeny even like four or five drops of stevia and then grab a spoon and stir.

We have to sprinkle with sesame seeds on top. No bun just seeds.
