Started Keto in May of this year as a way to kick things into gear after being postpartum for 6 months. I’ve always wanted to be an active mom and had a vision, so I knew I needed something to get healthy. I work full time and in my spare time love to experiment with keto recipes and turning carb loaded meals to keto friendly dishes.

ABOUT MARICELA
I am mom, a wife and I am 29 years old
I work and eat Keto
I was 6 months postpartum when I started
My cousin started Keto in April and she was about 5 weeks in and her weight was just coming off
So, I started doing some research on my end and I wanted to kick the baby weight
I found some recipes and told myself that I can eat that way, and it can’t be too hard
In college, I had done weight watchers and it was very successful, but for some reason it was not just clicking with postpartum
I started Keto the day after Mother’s Day
I somehow got my husband to jump on it just for two weeks
He was all on board and we hit the 2-week marker and I lost 7 lbs
Once we hit the 2-week marker, I wanted to keep going and my husband said he’ll try
I didn’t experience a lot of the really bad Keto Flu symptoms
A couple mornings, I woke up with cold shakes, but I would drink a ton of water and it went away
6 months later, I am here and I am almost 36 lbs down now
I am down with 3 pants sizes and I feel great
It did not work for me because I just felt deprived
I guess, it was just kind of old. I needed something new and motivating and it wasn’t just for me
In the beginning of Keto, I used MyFitnessPal
I did count macros for about 8 weeks and now, I stick around 20 net carbs or below
Now, I don’t really track anything and I mentally track my carbs
I started that about 2 months after and I still continue to see the weight dropping
I do intermittent fasting
I was 6 months into nursing when I started Keto and I was nervous in the beginning doing this worried how it would affect her, but we have a great pediatrician and she told me she won’t be affected
I did not notice anything with my production
I about a month ago, I got serious with intermittent fasting, but I don’t actually do it on purpose – that’s the amazing thing
Other than the scale dropping, before I got pregnant, I put away a bunch of clothes that does not fit me even before I got pregnant
I ran into that box and I pulled out those clothes and I had 2 shirts that I love wearing in college and it fit
I had a vision for myself when I had a daughter that, I wanted to be the active mom
Now, I feel like I can be that mom
I don’t have a goal weight
I just tell everyone that my goal is to feel comfortable with shorts
But, I am not in a hurry
I do hit the scale every day, but I am not pressuring myself because I feel like that’s when you stall out
I have big legs
And I played volleyball all through my life and it was never really an issue
It really did not become an issue until after high school
In college, I never wore shorts
That was just always the part of my body that I conscious
I stopped working out when I was on Keto
I am not currently making it a priority
TOUGH SPOTS
I did not really hit any long stalls
My weakness is frozen margaritas, especially during the summer
In Keto, I really do not feel deprived
I accepted that this is my lifestyle now and I am not upset about it
If you want it to work, it will work
A TYPICAL DAY OF EATING
I love breakfast, so on weekends, I don’t do intermittent fasting
I usually fast during the week for 3-4 days
I will usually start in lunch and it is usually leftovers from what I made
I usually just try to get a protein and vegetable in
Then I’ll eat dinner between 6:30 to 7:00
ADVICE
Do research
Know what you are getting yourself into, know what to expect
Keep it simple as possible and you will make it
BENEFITS
I actually notice that I was bruising easily, so I started taking potassium and that cleared it all up
I have been incorporating potassium and magnesium into my diet for supplement wise

JALAPEÑO POPPER CHICKEN
Ingredients: Chicken thighs (I typically cook about 6) 4 oz cream cheese 1 chopped jalapeño
1/2 cup shredded cheddar cheese
4 cooked and chopped slices of bacon
Directions: Pre Heat oven to 350. Place chicken in baking pan season to likings. I use garlic powder, salt, pepper, and poultry seasoning. Place chicken in pan and in separate bowl mix cream cheese, jalapeños, and bacon. Scoop mixture on to each chicken and top with shredded cheese. Bake for about 30-35 minutes.
CILANTRO LIME CAULI RICE
Ingredients
Frozen riced cauliflower or fresh grated cauliflower
3 tbl butter 1 whole lime Chopped cilantro
Directions:
Grate and steam cauliflower if fresh. If using a frozen mixture cook down in a pan once it is thawed melt in butter, lime juice, and cilantro. Lit ingredients cook in for about 3-5 minutes and enjoy
