Since I USUALLY practice intermittent fasting, I usually break my fast on the road. So my favorite breakfast meal is saved for the weekends.
We have chickens, and they lay the most delicious eggs ever. Of course, I want a runny yolk to savor the goodness. My hubby built this awesome coop.

Since I don’t eat bread to sop up the creamy yolk, I use spinach! This is a delicious breakfast of eggs and bacon, keto style. NO TOAST!
So I steam the spinach in a small amount of water on the stove.
Then I spray the pan with coconut oil and add a little olive oil. Once melted I crack a couple eggs and fry those babies up on low.
Bacon is always baked in the oven in large batches. Using a jelly roll pan, line it with foil and convect at 375 for about 20-30 minutes.. This varies, depending on the thickness of the bacon.
After everything is cooked, place spinach in bowl. Add salt and pepper. Top with eggs. Using kitchen shears, snip bacon into small pieces. Top with avocado and enjoy!
