#31 Lenore Casal – Lost 80 lbs and Healed Depression

Meet Lenore

Born in Brooklyn New York and raised in Boca Raton Florida, Lenore Casal has enjoyed multiple roles in full time ministry for over 14 years. She has served as choir director, worship leader, and in youth ministry.

Many of these roles were done simultaneously with parenting 3 children: Lila 15, Selah 11, and Judah 8.

During this time, Lenore began to see her health, and overall well-being decline and her weight creep up. This was difficult in so many ways.

She decided to take her life and health back by changing her diet to keto, creating challenging fitness goals, and so much more.  She even got a tattoo that says,”Nunca pares de luchar” which means “Never stop fighting” and she has stayed true to her “fighter mentality”

Now down over 80 lbs, Lenore is helping others fight! She is a Keto Coach, Life Coach and encourager to those that are discouraged in their life situation. Lenore is married to Casey and currently resides in Lakeland Florida.

Lenore has a non-profit that helps women and children get out from human trafficking.

KETO FRIED CHICKEN

  • 1lb  boneless chicken thighs
  • 1/2 tbsp paprika powder
  • 1/2 tbsp oregano
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • Lard or coconut oil
  • 1 cup whey protein isolate (no flavor)
  • 2 eggs
  • Buttermilk (This is optional depending on your carb intake)

Instructions

  1. Cut the chicken thighs into pieces.
  2. In a bowl combine the chicken with all the spices.  Mix until well combined.
  3. Beat two eggs thoroughly.
  4. Heat the lard (or any frying oil you’ll be using) between 285-300F.
  5. When the oil is hot, dip each chicken piece, one by one, into the egg (or buttermilk) then into the protein powder making sure all the sides are perfectly coated. Once coated, add the chicken pieces to your hot oil and fry 2-3 minutes until golden brown and cooked through.  The inner temperature of each piece of chicken should register at 150F+ when the chicken is cooked through.
  6. Add the fried chicken on a wire rack or some paper towel to absorb the excess oil.

HOW YOU FOUND KETO

  • I talk about loving yourself for your inside but on the other end of it I have always been very thin.
  • I have three kids and I lost my baby weight every time. All of the I have the under age of 30
  • So I would just to what everybody else did and I would do detox – just the regular things that people do
  • I think it is most likely with my metabolism at that time.
    And I am now 35 years old and things definitely slow down
  • For many years, I have struggled with insomnia and tried different things to try and help me with my insomnia
  • After my second child, I was diagnosed with postpartum depression and the insomnia came along with that, and every part of my body is exhausted

 

  • In the year 2016, I gained over 70 pounds in 6 months
  • It was because of a medication that my doctor put me on and he did not let me know that the side effects from the medication is tremendous weight gain
  • So I have to find a way.
    My old ways of being vegetarian did not work. Nothing was working
  • And then I found Keto.

 

  • I was trying to open at anything at this point. I was desperate because when I was used to being size 2 or 4, regardless of how you feel amazing on the inside about yourself and knowing you have a kind heart, it doesn’t feel good to go a up size every single month
  • I have never had a double chin in my life, and so I thought there was something wrong with me
  • And I think maybe there’s a growth or my thyroid, or something
  • I went to the hospital and X-ray it and the I came home and I realize, I have a double chin
  • The vegan thing – I was willing to try anything because at that point, I did have a stigma since I have watched all the Netflix documentaries and in my head is fat is bad, and animal products are bad and all these stuff
  • In the beginning I was a little hesitant, but I actually found Keto through Atkins. Because some point you gain a little bit of weight here and there and so I do Atkins diet for a couple of weeks to lose 10 pounds
  • I started out doing Atkins and then I started spying videos about Keto and I was like, “This is high fat. This isn’t exactly like Atkins.”
  • I research about it, I listen to many podcast, and I watch so many YouTube videos. I was just trying to do as much research as I could
  • And I found “How to Get Into Ketosis” and that’s where I began my journey which was on May 14th 2017
  • I have already lost 78 pounds at this point. At least 70 pounds, strictly Keto for 10 months

 

WHAT OTHER HEALTH BENEFITS HAVE YOU EXPERIENCED?

 

  • When I started Keto, I’ve noticed that I am sleeping better
  • I have great amount of energy
  • I started going out to the gym and I workout differently. Because I realize that for me, weight training is a lot more beneficial along side Keto
  • My depression is really not jus there. And I gradually stopped taking the medication because I was on anti-depressant
  • My psychiatrist was on a Keto diet too and he helped me along with that.
  • He said that the inflammation from the food that I was eating was affecting my brain
  • I was shock because I went through post partum depression for 11 years. After my second child, it just kind of hung around.
  • So my psychiatrist told me that the reason of my depression is inflammation that was causing inflammation to my brain
  • With his guidance, I was completely off with my anti-depressant and along the way, I was also losing weight
  • Not only it has humongous benefits with my sleep but also with my depression
  • It was an amazing transformation for me to be able to lose weight and my no my brain is healthier, it is functioning better, I have more clarity and energy
  • From that point I was like, “Wow. Keto is amazing.”
  • My husband has high cholesterol and he always had it.
    He has a lot of heart disease in his family.
  • And I kind of coach him through Keto
  • So we tested our blood. We had a physical in December before we started Keto, and then he has a retest last June.

So maybe 5 to 6 months into Keto journey his cholesterol went down to normal level for the first time in his adult life

  • The reason also why he did Keto with me is because Alzheimer runs in his family, and in my research I found out that it can help heal or prevent Alzheimer
  • My husband tried the standard American low fat, low carb diet and he would lose a few pounds but his cholesterol would never change

 

  • I have nurse friends and they said it is impossible and there is no way that we are eating this fat and made his heart fine. Their mouths were opened
  • Doing Keto with him kept me strong, and also I want my husband to live. He’s in his 40’s and all the men in his family have heart disease or heart attack.
  • There are so many benefits in Keto diet that people did not realize
  • The benefits are amazing for my husband and me.

 

  • I tracked my macros for a while especially when I was trying to lose weight.
  • I stayed within 75% fat and 5% fat, something like that.
  • I’ve been practicing intermittent fasting
  • I started off tracking every little things like net carbs and macros
  • But it got to the point that I got tired of tracking. So I just eat until I’m full and when I am full, I will stop eating. And I am not going to eat when I am emotional.
  • And I feel so much free

 

WHAT ADVICE WOULD YOU GIVE?

  • Fat is not bad
  • Our brain needs fat
  • Track your net carbs
  • Eat vegetables. You can get a lot of vitamins in a meat, but there are nutrients that are needed that you can get from vegetables
  • Try to add some lemon or lime juice to a sparkling water
  • Try to get away from soda first
  • When you’re on Keto, instead of thinking of it as a quick fix for weight loss, think of it as a shift in your frame of mind
  • Instead of wanting fake sugars, try to eliminate that as much of possible
  • I don’t really drink sweet things.
  • My husband is a cook
  • My favorite recipe is Keto fried chicken
    My husband found a way that is exactly like fried chicken
