

We love Thai food, especially the Long Song Chicken.
The problem is, at our favorite restaurant, I suspect they add too much sugar. And the big unknown, is whether it contains gluten or not.
So I set off to create a recipe with a similar taste. And voila, introducing my Keto Thai Peanut Chicken – Long Song Thai Chicken.
Mind you, my husband hates chicken, but I took a BIG CHANCE.
Here are most of the ingredients…
Start off by mixing the 1T Olive Oil, 1T Bragg’s Liquid Amino’s, and 1T Oyster Sauce.
Then snip the chicken tenders into strips.
And toss into marinade.
Let sit for about an hour.
Then saute in pan for about 10 minutes, or until cooked through.
While it is cooking, make your peanut sauce.
And steam your spinach for 5 minutes and strain.
To serve, place spinach in bowl, top with chicken, and ladle sauce over the top. Garnish with cilantro and red pepper flakes.
Hubby liked it so much, he had a second serving.
