#43 Christine Fox – Down 100 lbs

Meet Christine:

 

After years of being lean and healthy as a professional Figure Competitor, I had gained over 100 lbs! It was partially from using fertility drugs to conceive our last child, but then the weight just yo-yo’d on and off over the years since. On April 1, 2017 I decided to put an end to the up and down lifestyle and was determined to regain my old body! It’s a year later and I’ve lost over 100 lbs!

 

 

 

 

I’m a Super Slow Instructor which is a form of weight training using 20 min twice a week full body to failure. I’ve brought the Keto Diet back into my life after doing versions of it years ago.


It’s been the best decision I’ve made for my health.
I’m currently writing my first Keto book which will be out later this year. I’m also teaming up with Dr. Jay Wrigley and Dr. Lori Shemeck on an Orlando Keto workshop later this summer

ABOUT CHRISTINE

  • I was an NPC figure competitor
  • I came into the competition back in the day when we had body building and figure
  • I came in more probably a light weight body builder shape because I was somewhere around 3 to 4 percent fat, and they told me I got to gain some fat
  • Leaning out was something I was extremely familiar with
  • Over the years, after I competed, I was already done and we already had three kids
  • Because of keeping such low body fat, I got to the point were I was like, I got all these trophies and everything, and I am done. So I told my husband that we would have another baby
  • Because I was not in the double digit and the 10 percent body fat, I was not even menstruating in the first place
  • So, I had to get to add the fat on first and then I still have to take the fertility drugs
  • Years went by, I did conceive.
  • He was preterm, so it consumes my life
  • So, I was a little afraid and I held on tight.
  • When I was competing, I was super slow instructor
  • I trained with Ken Hutchins
  • Super slow is a form of exercise which has no cardio, and is roughly 20 minutes twice a week
  • I don’t do anything that causes my muscles to be not at rest
  • The more I rest, the leaner I become
  • Basically when I did tha with the super slow, I was a super slow instructor and I gained all the weight and I really wanted to go to Ken, but I was so afraid to go to Ken – I was embarrassed
  • I gained a 100 pounds for 4 months
  • If you already have the fat, it is easy to gain it back because the fat cells are there
  • So, as an Italian, I am eating pasta and breads and no sweets. That’s where I am gaining my fats
  • I went to the gym about 2 and a half weeks later and my friends asked me if I got a boob job and I am like, “no, I went to my mom’s a couple weeks for a pasta.”
  • No, I did not have a weigh issue when I was younger
  • I am used to be a much smaller person
  • Once I started out with Ken Hutchins on 2010, I leaned out to the point where people want to know what I was doing
  • And then, I gained weight again
  • During the leaning out of competition, I was doing out a form of Keto, but it was years ago when it was not called Keto
  • After I have gained the weigh the 2nd time, I decided that I needed to be a lot smaller and be happy
  • I started leaning out with low fat, low carb and zero dairy
  • I did not eat any red meat and it did work but your body was not healed
  • Your energy was low, you’re sluggish and you are just not a normal person
  • Probably months in 2017, I started flipping it over to Keto
  • And it was a leap, I took it and I jump at it
  • My body was not having meat, so eating a lot of fat was hurtful for the first day. But, after that I was good as gold
  • And I haven’t look back ever since

 

HOW ARE YOU FEELING NOW?

  • Completely different
  • I thought I had energy when I was leaning out in the beginning of last year, I actually didn’t
  • My husband is so much happier because we can eat in public together.
    I would always have a bag of food with me everywhere
  • As a social aspect of Keto has brought me back into being able to go out in public and doing more with my family and friends that I ever had before
  • And I am back of being happy and outgoing, and my inside is feeling so much better than it has in years – I feel healthier
  • I do have a few heart condition and pericardial cyst
  • And Keto has affected none of that. However, it hasn’t bothered me
  • I was in the hospital multiple time when I was not on Keto
  • So, I think, everything that everyone was worried about has flip-flopped and my heart even feels healthier than it was in years

 

  • Within a month and a half, 25 pounds came off right away
  • What happened was, I had lost all the fat and before I flipped to Keto I tolds myself that I am going to do a little cheat meals
  • I kept it off and what I was trying to do is maintain and successfully maintained for the last 4 or 5 months until recently
  • Because I was writing a book, and in this book, I am dining out. And while I am dining out, I am trusting the chefs what I am asking them to make
  • I use whole foods mostly, but I will say that if I do protein powder, that was the only dairy I was brining in
  • I would stay away from soy, obviously as a female in general
  • I love unsweetened coconut milk. I have no problem in using that with anything if I want to
  • I don’t do any other nuts. I am not a almond person
  • I am extremely weird when it comes to carbohydrates. I don’t like wasting them
  • I have an actual mantra and it is “I watch my carbs so much that I don’t even use dental floss that has a flavoring in it.”
  • And I don not use dental floss that has a flavoring in it
  • My toothpaste – nothing. No sugar in my toothpaste
  • I don’t have a source of carbs. My carbs are coming in in a form of broccoli, kale or spinach
  • I still say that zero carbs is 1 carb when it come on a package or something
  • I’d rather go safe than sorry
  • The net carbs is the only thing that I am considering
  • I don’t give my son red meat because I would say it was a lo of literature
  • I used to read bunch of other things
  • I just kept away red meat for myself even and my son because I thought, not all red meats are created equal
  • So, what we use is grass fed and grass finish. I definitely don’t do just the grass fed
  • That’s the only meat that I trust for him just so I can control what he is eating
  • Strauss is my favorite meat
  • My husband wants to convert to Keto
  • I really do want to covert my parents because one is a type 2 diabetes, and I really want to get him off the medication

 

ABOUT YOUR PROJECT

  • I am doing a multi series book on eating Keto at Disney and that is Disney all over the world
  • We’ll have that out probably this December
  • I do intermittent fasting
  • I eat two meals a day and by the time I am done eating in the early evening, I can go until the next day or multiple days
  • After a day 2 or 3, you feel amazing. It is just getting past the first day, I would say
  • I do fast a lot.
  • With the book, I have to eat more often
  • I eat a fat in one and then I am good.
  • I am never hungry in this Keto lifestyle ever
  • Once a week, I would do up to 3 days or 4
  • I am just eating 1 or 2 meals a day
  • As a professional competitor, I look at food as a fuel.
    I don’t glorify it anymore
  • If you can get in the pass the point of food as food and look at it more as fuel, the we are good
  • So when I am leaning out, I am in a different mindset
  • It’s completely a different Christine
  • When I am not leaning out, I don’t care. I just eat.
  • And I just found myself snacking all the time
  • For the book, I do not get any meat that is cooked on the grill because the grill has already canola on it and it has high canola all day
  • So, they will have to cook the meat separately for me
  • I don’t do fast-food restaurants for that main reasons
  • Most people have seen the recent thing about olive oil that is not being a 100% olive oil
  • But I use avocado oil.
  • So far I have done 40 restaurants and there are 90 all around Disney world
  • I was doing the book on the side without telling anybody
  • What I am doing is, I am getting at least one of something
  • Then a couple of restaurant chefs out there had talked to me and said that if I want to help put Keto on their menu
  • I’ve converted like 10 chefs to Keto

 

FAVORITE RECIPES

  • One would involve dairy and that would be a version of beef stroganoff
  • Basically, I’ll cook the meat and use the renderings. I use an avocado oil, pan cook it, use the renderings and mix that with a little bit of heavy whipping cream and season it and pour all the miracle noodle
  • I don’t do swerve, I use zevia
  • If I am doing dairy, I do an unsweetened iced tea and a dash of heavy whipping cream
  • If I am not doing dairy, I also do unsweetened iced tea with apple cider vinegar and zevia
  • I love zevia

RECIPE

KetoFitGal’s Hemp Cloud Bread
 
3 oz Organic Cream Cheese (room temperature)(I used Organic Valley)
6 oz Shelled Hemp Seeds
6 eggs divided (I used Nellie’s Free Range Eggs)
1/2 tsp Cream of Tartar
Pink Himalayian Sea Salt
 
Preheat oven to 410 degrees
 
Separate eggs. Place whites only into a mixing bowl (kitchen aid) and add Cream of Tartar.
 
Whip Egg Whites until they form peaks.
 
In the Yolks bowl, add the Cream Cheese & a Pinch of Sea Salt.  Mix well.
 
Add Egg Whites a small scoop at a time to the Yolks mixture. Lightly FOLDING it in. Once mixed fully, add the Hemp seeds slowly folding.
 
Lightly grease a loaf pan with Coconut Oil. Remove off any excess oil and softly add the mixture into the loaf pan. It will be fuller than the loaf pan. The mixture shouldn’t seep over the sides of the pan while cooking. It will rise up instead.
 
Bake for 30 minutes (depending on your oven). Check with a cake tester until it’s done in the center.
 
Remove from the loaf pan and note that the bread will “fall”. It won’t stay super fluffy.
 
Use a serrated knife if you’re going to cut into slices. Enjoy
 
(Note.. I usually toast all my Cloud Bread before eating the pieces)
