#59 Tiffany English – Down 35 lbs – Keto Noir

  • I have been dieting since my teenage years
  • I have always been athletic. I was a softball player and a competitive swimmer
  • I was always very interested in sports as a young girl
  • I also had my first child really young, so that’s when my diet journey began
  • I always spend time trying to figure out which diet works best and none of them work best
  • I found Keto through a good friend if mine
  • He is a buddy of mine who started Keto over a year and a half ago
  • I happened to scroll on his profile one day and he was looking really fit
  • I contacted him and asked how did he lose all this weight and he told me about the Keto diet and how he is really feeling good now
  • He sent me to reddit and reddit gave me an idea of what I am looking out
  • Basically, after reading everything I could get my hands on, I just started to pour myself into it
  • I downloaded 5 or 6 applications because I had absolutely no idea which one would work best
  • One that I have found that works the best was carb manager, and I liked that one when I first started
  • For the most part now, I used MyFitnessPal
  • First I started total carbs and I just don’t want to screw myself up
  • At the time, it was my birthday weekend. I had an event planned with my girlfriends
  • We were supposed to have a lot of food, drinks and have a good time
  • And we still did that, but instead of getting that regular heavy carb food that I would normally get, I got sashimi and the next morning, I made bullet proof coffee and I just try to stay and strict as possible
  • My husband is the most supportive person in my life and he was like, “if this is you want to do, go for it.”
  • I just implemented intermittent fasting 3 weeks ago to push through a plateau
  • And I had been resistant at first
  • So, I started with the 13 hours fast just to see where I was and I figured that I am asleep most of that time, so it’s not that difficult
  • Once I got through a week of that, I decided to head in to 16 and 8 phase, and it has been fine for me
  • At first, I could not quite figure out my energy level, but that went away after a day 3 and 4
  • I go to the gym at 6:00 PM and I break my fast at 1:00 PM
  • I was always a morning exerciser, but now, I don’t have that flexibility
  • I started on February of 2018 and I have lost 35 pounds
  • 35 pounds for me is great
  • It really is about how I feel, and I feel so much better now
  • I have great energy, lots of focus and lots of time
  • For, it is not about how much weight I have lost, but how our lives have changed

  • For years, I always had this aversion of food photos
  • The food that you make does not translate well in photos
  • I am super critical of the photos of the food, because when I post it on the website, I want it to look appetizing
  • I live in Maryland, however, my parents are from Washington, D.C. and their parents are southerners
  • I don’t drink wine everyday, although I used to
  • I love wine and I love red wine the most
  • I had been a wine fan and have an expensive collection of wines
  • I am hugely not into white wine
  • I really kind of a charcuterie and olives, and different types of cheese. That’s always kind of my go to meal even long before Keto
  • Being able to translate that into Keto has been fantastic
  • I can do uncured salami, and Spanish olives and that’s a great meal for me and of course my glass of wine
  • The other part of the reason on why I started Keto is because I had my baby at 39 
  • It was vastly different that the 22 years prior when I had my oldest
  • I actually went up, 25 lbs with my youngest and it was something I had never experienced before
  • What I always say to people is, my Keto is not going to be your Keto
  • We are all different
  • Don’t assume that, just because I do things this way, that’s the way you’ll have to do it too
  • A part of what I hope to do is to help people better understand, especially for some of us who has a family history of diabetes or heart disease
  • If I can help people with that, that is my ultimate goal
  • I do intend to write a cookbook because I am always cooking

Crock Pot Carnitas

Ingredients

1 large package Pork tenderloin

1 can of Chipotle peppers in Adobo

2 tbsp olive oil

1 tsp dried oregano

1 tbsp ground cumin

1 tbsp Badia Complete Seasoning

1 tbsp smoked paprika

2 tbsp sea salt

1 tbsp ground black pepper

1 sweet onion diced

6 large cloves minced garlic

1 jalapeno chopped

1 can diced tomatoes with liquid

¼ cup of Lemon and Lime Juice mixed

Instructions

  1. Chop onion and mince garlic. Add to crock pot.
  2. Place pork tenderloins into the crock pot on top of the onions and garlic.
  3. Add the olive oil, oregano, cumin, paprika, salt, pepper and Badia Complete seasoning to the pork.
  4. Add the diced tomato, Chipotles and jalapeño to the crock pot with the citrus juice and combine with a spoon.
  5. Cook on high for 5 hours or low for 8 hours Add in the tomatoes and squeeze the lime juices over the pork. Mix everything together until well combined.
  6. When the crock pot has finished let the meat cool and place in a container in the refrigerator. Preferably overnight to ensure the meat has time to absorb the marinade.
  7. When you are ready, remove the meat from the liquids and reserve the liquid. The pork should be very tender and easy to shred with a fork.
  8. Place the pork on a foil lined pan, and shred the meat to the desired size.
  9. Take the reserved liquid and strain the solids out. Use the remaining liquid to pour over the pork and broil the pan in the oven on high for 10 minutes or until hot and the edges of the meat are crispy.

Serve with Avocado, Sour Cream, Cojita cheese, salsa, wedges of lime or whatever toppings you enjoy!
