ABOUT STEPHANIE

  • I have 2 kids; a husband and I eat keto 
  • I love the weight loss, the mental clarity, just all of it
  • Before I really dedicated myself to this way of eating, I had my second child, I suffered from depression and anxiety, and have for years
  • After she was born, I had some very intense anxiety, I felt yucky in my body – I just did not feel good
  • Other than just post-natal weight, I gained even more weight and just feeling really lousy
  • I stumbled across Dave Asprey’s information and that was my first inkling into this type of eating
  • I kind of read his blog, studied about high fat, low carb, and all that stuff
  • I had done the whole 30 in the past and I feel like I just have a high food education. I knew a lot of alternative ways to eat, but haven’t really heard about keto until then
  • I kind of tried it a little bit and I felt amazing
  • I got depressed because my husband lost his job and I fell off of keto
  • We ended up moving and fast forward all these months later, my husband is working for my favorite local fried chicken place and they’ll give you free money every month so that you can eat their food
  • And we both gained so much weight because we loved the free fried chicken
  • I packed on some weight and I revisited Dave Asprey’s blog
  • Somehow, in that tunnel fell into keto and came across Healthful Pursuit
  • I studied it, got on Instagram, followed a bunch of accounts and here we are

 

HEALTH BENEFITS

  • Immediately, I was pretty miserable and I think most people feel that way
  • Once I got through that slog, I could think really clearly, had an insane amount of energy and I noticed before I started that I was just so tired
  • At one point, I was even withdrawing from social activities, which is very unlike me, and I just feet like that I have gained a lot of that natural confidence back so I can be social again
  • The biggest benefit must be me feeling better in my body
  • It came faster than I thought it would because, within the first month, I was feeling pretty amazing
  • So, a lot of people say that keto is complicated and difficult, but I find it to be pretty easy
  • When I did my research, I thought to myself that this will be really hard and there are so many little things that I need to track and understand what’s happening and works for your body
  • Once you’re off to races, it gets pretty easy, but I am not a perfect keto eater
  • For example, yesterday, I ate Mexican food
  • But today, I had scrambled eggs of breakfast cooked with butter. I just love a pile of eggs
  • I also had a panino roll up and it’s like mozzarella with meat wrapped around it and if I really want to throw everyone off, I’ll dip in mayonnaise
  • Some of my weak points when, if I don’t plan well enough, I will just reach for things that are easiest and closest and that’s usually macaroni and cheese or cookies
  • I hate meal prep and I wish I loved it because being as prepared as possible is really helpful when it comes to trying to lose weight
  • It’s nice to hear that some people do not do a meal prep
  • I find tracking very hard as well. I even had a hard time remembering how I even woke up in the morning and I have to sit there and input the stuff – it’s just a lot
  • You can be successful without tracking, but some people do need to track
  • I love fasting
  • I have done fasting, but I started not long after doing keto
  • I’ve tried to push past the 16/8, but I fast most days
  • It’s usually from dinner to lunch the next day and I skip breakfast most of the time
  • Some days, being intuitive just does not work for me
  • I do not work out but I used to work out and lift weights
  • I don’t like it, but I like the results. I am just not really physically driven
  • I lack the motivation even if I know how much I like lifting weights and how good I will feel, but it’s still so hard for me
  • I have this athletic friend who told me that a woman will have a peak performance when she’s in her 40’s?
  • I never did the research though, I just took it for a fact

 

ADVICE

  • I always tell people to keep it simple
  • You don’t have to buy a bunch of thing or products
  • You don’t have to spend a lot of money on the most expensive cuts of meat
  • You don’t have to buy the fanciest cheese
  • Just keep it simple in the range of food that you like
  • I also tell people not to beat their selves up
  • The consistency is what keeps you going
  • I am consistent, I am just not perfectly keto
  • Consistency is the key and top priority
  • Everyone has their trials and it is important to not let that kind of stuff to get you down
  • It’s all about your body, it’s all about you and not them
