I absolutely LOVE fish and finding exciting ways to prepare it that is gluten free and the kids will eat is a challenge. Until last night, that is!
This recipe is amazing, the flavors tickle your tastebuds, and you will actually look forward to leftovers the next day (throw it on a salad) yum.
Dip fish into flour, then beaten egg, then coconut and lay on tray covered in parchment. Sprinkle with Sea Salt and cracked pepper. Place in refer for about 30 minutes. Heat olive oil in pan on medium heat, and cook fish until golden, about 5 minutes on each side.

Note: I LOVE cooking with Cast Iron – Second favorite is Stainless Steel – Throw your teflon coated, non stick crap away.
Prepare Sauce – this baby is adapted from Elizabeth Rider, Health Coach Extraordinaire…..I make a huge batch because I put it on EVERYTHING!
Place all ingredients in blender and blend until smooth. Serve Fish with steamed broccoli and drizzle sauce on top.
