When I was on my low fat craze, I was obsessed with fat-free refried beans.
Now i am obsessed with this healthy version.
First you layer the pan with the bacon
Then you place the sliced zucchini over the bacon
Cook until zucchini is soft and bacon is crisp.
While they are cooking, measure all the spices into a cup and mix well.
Once cooked, remove bacon and zucchini and puree in food processor or blender.
Saute onion and garlic in bacon grease.
Add zucchini puree and seasoning back into pan. Cook for about 30 minutes, or until reduced to refried bean consistency.
I am not going to bother putting a finished product photo because when I have posted photos of this in the past, people think it looks gross.
Oh well, it tastes amazing! Enjoy with grass fed ground beef – taco style.
