Salmon Artichoke Zoodles

Ever go out to your garden and find a HUGE zucchini, wondering how it got there, and what you are going to do with it? Well Zoodles are my new favorite discovery. The best tool for creating this is a mandolin….and they also have a special peeler you can use.

This Low Carb Dinner will sure to delight you!

Salmon Artichoke Zoodles

  • 2 pounds wild salmon
  • large jar artichoke hearts
  • 5 lbs tomatoes
  • head garlic
  • 1 cup chicken broth
  • bunch of basil
  • salt & pepper & red pepper flakes

Using a mandolin, you can make the zucchini noodles.

Sauce: Slice up a head of garlic and saute in olive oil. Chop up 5 lbs tomatoes and add to sauteed garlic. Add 1 cup chicken broth and handful of chopped fresh basil leaves. Add salt, pepper and 1/2 TBS red pepper. Cook for 30 minutes. Blend in blender. and place back in pot.

Add 2 pounds of wild salmon chunks, and 1 large jar artichoke hearts and cook until red pepper flakes. Serve over Steam zucchini noodles.
