Salmon Artichoke Zoodles
Using a mandolin, you can make the zucchini noodles.
Sauce: Slice up a head of garlic and saute in olive oil. Chop up 5 lbs tomatoes and add to sauteed garlic. Add 1 cup chicken broth and handful of chopped fresh basil leaves. Add salt, pepper and 1/2 TBS red pepper. Cook for 30 minutes. Blend in blender. and place back in pot.
Add 2 pounds of wild salmon chunks, and 1 large jar artichoke hearts and cook until red pepper flakes. Serve over Steam zucchini noodles.
