One of my absolute favorite meals is salmon! I love to smoke it, broil it, eat it raw, and make fish tacos. You can make these either low carb or high carb, depending on your preference.
Wild fatty fish is super healthy and high in Omega 3 fatty acids. My favorite is wild salmon. Most of what you find in the stores is farm raised, but choose wild Alaskan salmon when you can find it and if you can afford it!
First off wild salmon is not only high in Omega 3’s, it is a great source of vitamin B12, D, selenium, and B3. It is easier to digest than most protein sources, and it tastes great!
What is all the hype about Omega 3’s? According to Web MD, “They may help lower the risk of heart disease, depression, dementia, and arthritis. Your body can’t make them. You have to eat them or take supplements.”
Gross Out Alert: One of the reasons I don’t like to eat the farmed salmon is it grosses me out to think how they are raised: crowded, fed antibiotics, and dirty. It reminds me of that old Roseanne Roseannadanna skit from Saturday Night Live. When she says, “These fish are swimmin’ in their own toilet.” At least the wild fish have a much larger toilet.
Fish Tacos:
Spread salmon lightly with olive oil. Heat grill to medium heat and grill fish on each side for about 4 minutes or until opaque. Meanwhile, mix Greek yogurt, apple cider vinegar, and stevia together. Toss with cabbage and sprinkle with salt and pepper.
Prepare Pico de Gallo:
Heat corn tortillas on hot pan for 20 seconds on each side flipping until warmed through.
Assemble: corn tortilla, salmon, slaw, pico de gallo, top with 2 slices avocado, and siracha to taste
To make Low Carb Salmon Tacos, ditch the corn tortillas and add extra coleslaw. For High Carb, ditch the avocado.
