SHOW NOTES

  • Grew up in Idaho
  • Turning 40 this year (2018)
  • 10 months of being in strict Keto
  • I started in January of 2017, but it took me about 5 months to get the hang of it
  • I am recovering bulimic and binge eater.
Even though I quit, it was hard for me to give up the binging
  • I was also doing too much protein and not enough fat so I was not as full and satisfied as I wanted to be. So it took 5 months to get that working
  • I had a food addiction.
  • And for me, eliminating the sugar and doing fasting has helped me going to recovery
  • It’s just like alcoholism.
When you eliminate the alcohol, you can start to recover from your addiction and it is the same thing with food addiction.
  • Once you eliminate the sugar, it take away that chemical component and gives you to be able to start building on your actual addiction

HOW DOES YOUR BODY RESPOND TO THE SUGAR ALCOHOLS?

  • I have Celiac.
Because my system is so sensitive I get really bad digestive issue, so I can’t have them. And they also gave me the same sugar cravings
  • I don’t like foods pretending foods I shouldn’t have. I try and stay away from those
  • I love almonds, but they upset my stomach.
I just can’t do a lot of nuts
  • I think everybody is different and I know that I have foods and things that trigger me. And when I first started Keto, I would have a lot of those things
  • But for me, the longer that I have been Keto, the less I even want

  • I’m actually doing fast right now because something is still causing me a little grief in my digestive system
  • So the goal is to go fast and go off dairy
  • I tried doing the popular egg fast and I have gained 5 pounds, and it just made me sick and I was extremely inflamed. I don’t think that’s for me.
  • I do still eggs right now.
Ever since that egg fast, I eat very occasionally.

HOW LONG DID YOU HAVE YOUR EATING DISORDER?
AND HOW DID YOU FIND KETO?

  • I started binge eating as early as 7 or 8 years old and then I quit the purging about 35 or 36 years old.
  • So about 25 years of eating disorder
  • I did a 12-step program that helped.
  • That eliminated the purging, but what you don’t overcome with that is the binging. So I had my weight go up and down a lot more
  • I have a family history of diabetes
  • The issue of bulimia is you shoot your blood sugar up and then remove the food so it causes different balances with your insulin
  • I found Keto on Instagram during the holidays of 2016
  • I knew that carbs is my issues and that’s where the cravings would come fro. So I had a really strong feeling that it would work for me
  • And I started Keto January of 2017 and became strict Keto in May
  • When I first started out, I had myfitnesspal and I tracked everything, weigh myself everyday and that was part of the reason why I was failing
  • I was doing about 75% fat, 20% protein and 5% carbs
  • Once I kind of get the hang of it I got tired obsessing about it
  • So I quit keeping tracking, I got rid of my scale and I did not weigh myself from July of 2017 until December of 2017
  • I travel for a living so my routine basically looks like mayonnaise, uncured deli meat; celery sticks with ranch, avocadoes, a lot of chicken, and a lot of cream cheese. Those are kinds of my basic and my go to.
  • I work for a shuttle company and I am in sales, so I am anywhere.
  • I only sometimes do fast when I am travelling.
For whatever reason, fasting and travelling are difficult
  • I will usually have 1 or 2 weeks at home during a month
  • I am an all or nothing kind of girl. I have gone my longest fast for 10 days.
  • I was really resistant to the idea of fasting and I used the eating disorder as an excuse even though I have never had a problem with skipping meals.
  • I was actually going to do just 48 hours and I came across this video with Dr. Fone saying that if you could go 48 hours you might just go for a week
  • The first 3 days was the hardest, and I did it. I went the full week for the first time.

  • The first 3 days was awful
  • It was totally mental
  • The hunger pain starts to decapitate during the day 2.
At least they did for me.
  • I was having headaches and I did not read far enough to the book that I had purchased to learn that I needed to do some electrolytes as well
  • So once I put that electrolytes in, it was a breeze and it was much easier to do

RESULTS WITH KETO

  • I think I am close 70 pounds now. Last time I’ve checked, I lost 68 pounds
  • I did not have a lot of health issues other than the Celiac and digestive issues
  • I am regular now
  • With the fasting, other than the weight loss, I have noticed is I quit taking allergy pills, ibuprofen and I have eliminated just about every medication that I was taking
  • I do a lot of kambucha because it tends to settle my stomach when it is acting up a little bit
  • Before I was Keto, I would drink this yogurt stuff but I don’t do that now anymore
  • To be honest, I think it really did not do anything. I could not tell the difference
  • I was doing the Apple Cider Vinegar, and I decided that was not for me.
The only thing that it did is that it gave me acid reflux
  • At least for me, it’s not just the Keto but also the fasting
  • When I first started Keto, I was still eating too much food and I felt like it was helping, but I can still binge on jerky or nuts
  • But once I did that first fast, those cravings just disappeared
  • That’s why I do keep up the regular fasting even just 2 to 3 days
  • But also just eliminating the sugar and I think that is why I have been more successful, have been able to stick to it and haven’t cheated because I do not have items other foods on my diet
  • One thing I do on occasion is I do berries
  • If I want something sweet, it is either raspberries, blackberries or strawberries
  • And now that I have been Keto for so long, those tastes better that they ever did before and they really give you that satisfaction, plus you got the fiber in their
  • I do eat a lot of vegetables
  • I do a lot of cauliflower because it really feels like it gives you that carbs feeling where you feel full and satisfied after eating it
  • I do a lot of salads, Brussels sprouts, cucumber, and zucchini
  • I don’t think I could go without vegetables. That is one of my favorite especially with some butter on it and some pepper

ROUGH SPOTS

  • The only rough spots I really hit was a couple months ago and I attribute it more to the addiction
  • With any addiction, food is not really the issue. So once I eliminated the foods I start having emotions coming back and triggered me a little bit to want to go and do what I have always done and have the sugar
  • For me, it was a lot to do with the way I was raised and stuffing your emotions down
  • And food felt good. It was something that felt good, and as I get older it was kind of a release and so I would eat food and zone out
  • That’s what I kind of did to escape reality. So it became a total addiction for me
  • Keto is definitely the way to go, but when you got emotional issues to deal with or you are a food addict, or you are a binge eater, you’re going to need support
  • I feel like a lot of people who don’t succeed in Keto probably has some of those food issues that I have and if they will do the 12-step or a therapy with it, it will enhance and help them stay the path with the Keto

ADVICE?

  • Do not get discouraged
  • You might screw up or you might not do it right, but just keep trying
  • Just because it is not working out right away, it does not mean it is not a good program
  • The key is to really be persistent
  • You are not going to get results overnight and some people lose a lot in the beginning, but you’re going to hit a stall
  • We talk stall as a negative thing, but I see stall is your body getting used to that weight, taking its time, readjusting and the you start to lose again

WHAT’S NEXT FOR YOU?

  • I love to lift weights, so I wan to do a figure competition
  • Right now I am looking for trainer. I think I am going to work with somebody and let them help me with those decisions
  • I would have to say I would cut the protein because I do pretty well with lower protein and more fat
  • I have 131 lean mass
  • I just barely started lifting again. I stopped lifting during the fasting process
  • I focused more on more just losing fat and not trying to build muscles at the same time, and I haven’t lost any of the muscle through the Keto and fasting process
  • When I was fasting, I stayed completely away from the weights

  • I have lost 10 inches around my mid section and I do not have loose skin.
I don’t know if it is genetics or if it is the fasting but I kind of feel it is the fasting that helps with that
  • I do fasting full week every month

  • It is getting easier because everybody around me has gone Keto
  • For me it is easier to start fast at night. I start my fast 9:00 at night. That way, the first half of it, you’re asleep
  • I’ve done the 24 and 36 hours of fast, but once you’ve done the full week of fast the 24 and 36 hours is just like stupid
  • It seriously feels a lot easier when you get to the 72 hours.
You’ll feel good, and you have more energy
  • The ten day fast I did, I just had water
  • But in the past I have done MCT oil or butter in my coffee
  • Water was easier
  • Your body gets sensitive when you’re fasting and caffeine gives me anxiety

FAVORITE RECIPE

  • My favorite recipe is I have an instant pot
  • And I love putting shredded chicken breast and a block of cream cheese, and a green enchilada sauce over it. Mix it all together and put it on my cauliflower rice
  • 4 or 5 shredded chicken breast
  • A package of Philadelphia cream cheese
  • A small can of green enchilada sauce

FAVORITE QUOTES/BOOKS

  • I have been listening to “The Secret” while I travel
  • Part of the reason I have been overweight is I focus on it so much
  • The other thing I’ve noticed is I am still the fat girl in the mirror sometimes.
I wake up, look at in the mirror and I see the old version of me
  • So I have been really focusing on trying to release that, let go and become more positive, and “The Secret” has been really helpful with that
  • It is an audiobook that I purchased online
  • Keto works
  • For someone who struggled with food and eating disorder for 25 years, if I can make it work for me and lost almost 70 pound then I really feel that anybody could do it
