Eggs in a Basket
Ingredients:
6 Eggs
6 Slices Ham
2 T Butter
6 Mushrooms, chopped
Scallions, chopped
3 T Sour Cream
How to prepare:
Sauté mushrooms and scallions in butter until tender. Add sour cream and cook over medium heat until thickened. Coat muffin tin with cooking spray and line with ham, Place 1 T of mushroom mixture over ham and break the egg over mixture. Bake at 350-degrees for approximately 10 minutes or until set.
